Apple changed many years of display-options in macOS E-Mail with the release of 10.15 Catalina. This no-longer-so-new version is the ability, in the E-Mail column view (using the view-> Use-dropped columns-manage Layout) sizes of the columns, click on sort by properties (such as sender, subject and size), and keep track of your preferred ascending or descending order, first order, when you switch between sorting options.

Unfortunately, although in the course of time and a lot of complaints in the Apple forums, this remains in place. But never say never.

The first Version of iTunes to its successor Catalina, the music app, eliminating the three-column view, some iTunes had loved users, and relied on for many years. It was one of the most complained about features, and apparently, Apple listened. In December 2019, with the release of 10.15.2, the iTunes column Browser is returned in the music.
